What is Chitosan?

Chitosan is a naturally-occurring product found in fish waste such as shrimp shells to prevent antimicrobial cross-contamination.

Research into chitosan has among others been undertaken by Swedish research centre STFI-Packforsk, which has found that that chitosan has high oxygen barrier properties and has been engaged in a project on developing renewable packaging materials to compete with synthetic polymers such as PET and EVOH.

Also experiments conducted in Japan on the effectiveness of chitosan in active packaging applications have yielded positive results.
